That makes it nearly impossible to pin an enemy unit.
Lets say you have an enemy unit surrounded by three units in star formation. You attack and win but the defender plays for minimal losses. He can now retreat to three different hexes - two of them now 'behind' the attacking unit. Easier to catch a wet bar of soap.

Please reconsider answer 4&5 above. You could allow retreating units to always pass through friendly units (thereby disrupting (=no attack next turn) the friendly) to make it a bit easier to escape. But surrounding the enemy is the main goal of any military campaign since the dawn of time for a reason.

No... the rules state...

If your movement path crosses the zone of control of an enemy unit your unit immediately stops and does no more this turn but the enemy are given an option to attack if they have enough MP's.

They won't simply slip away... you will get a chance to attack.

A couple thoughts as this first battle is underway:

1. Can you detail what fortifications are provided at each level of digging in.
2. Confirming that the FOW will not show what level the opponent has dug in.
3. 60 minute battles feel like a long time for the defender to hold out on small maps. The defender side has limited survival options when losing ground as surrender is not an option as it will result in removal and the opponent if winning will be pushing for elimination the defender's only recourse is to wait out the timer. A tactical withdraw would be an option but I don't know how hard it is to adjust maps to have a safe zone (similar to Highway to Hell) but I think shortening the battles to 30 min would also be a solution.

1 - Its not set in stone... just regard it as each level 1 is basic to level 4 more advanced.

2 - Correct your opponent does not see your dug in status.

3 - 30 minutes is too short in my opinion. I will compromise and set up 45 minutes henceforth.

Depends on terrain... If A Canadian Cat advances ona road the same time as Panzer Kraut retreats down a road no contact.

If A Canadian Cat advances down a road and Panzer Kraut tries to withdraw through a forest then a contact comes into effect.

ZOC have no impact on move precedent.

For calculation of losses do WIAs count as KIAs or is there a difference? Basically the question is if its worth the while to medic the wounded if you don't need the ammo.
Hmm, sounds a bit harsh, does it? ;)
