1 Beaver skinned and cleaned
1/2 cup vinegar
1 tablespoon of salt
2 teaspoons of soda
1 Medium onion sliced
4 strips of bacon or salt pork
1/2 teaspoon of salt
1/4 teaspoon of pepper
1] Wash the beaver thoroughly in salt water,then let it soak over night in enough cold water to cover. Add 1/2 cup of vinegar and 1 tablespoon of salt to the water.( This is important if you wish to avoid getting the runs)
2] The next day, remove the beaver from the brine, wash and cover with a solution of 2 teaspoons of soda to 2 quarts water. Bring to a boil, reduce heat and simmer 10 minutes.
3] Drain, then place beaver in roasting pan. Cover with sliced onions and strips of bacon and season with salt and pepper.
4] place lid on roaster and bake in 375 F oven till tender. Serve with tart jelly. serves 4.
